Dark Chocolate Mint Lave Cake

In full disclosure, this recipe is not necessarily a good choice when you are trying to drop fat or limit sugar. This is a dessert recipe plain and simple but it only has a few ingredients and is so tasty!!! Quick and so easy to make that even the kids can do it! It's clean as far as desserts go. As I always say, "Don't give up the food you love, just get better food!!!"

The dark chocolate keeps it from being overly sweet.

Ingredients:

1/2 cup of ghee butter (clarified butter)

5 oz Theo Dark Chocolate or another raw cacao dark chocolate

1 1/4 powdered sugar (prefer organic)

2 whole eggs

3 egg whites

1 Teaspoon Vanilla

1 Teaspoon Mint Extract (optional)

1/2 cup organic white flour

Directions:

Preheat the oven to 425 F. Spray 4 custard cups with baking spray and place on a baking sheet.
Melt the ghee and chocolate and whisk until smooth. Remove from heat and mix in the sugar until well blended. Whisk the eggs and egg whites together and add to chocolate mixture. Add vanilla and optional mint. Mix in the flour. Divide evenly between custard cups.
Bake until all sides are firm and centers are soft, about 13 minutes. Let stand for 1 minute to help firm.
Dust very lightly with powdered sugar, top with berries and mint leave.
